Carrot-Gourd Halwa Desi Fusion

This is the Desi Fusion of Carrot Halwa and Gourd Halwa with Sugar Free by my mom. This one is our favourite Family Recipe. As Carrot Halwa is my favourite and Gourd Halwa is my Daddy's favourite so my mother find a solution to make both of us happy with this Desi Fusion of Halwa's and created new Carrot-Gourd Halwa.

INGREDIENT


  • Carrot :- 2 Cups
  • Bottle Gourd  :– 1 Cups
  • Ghee :– 2 Tablespoons
  • Milk :– 3 Cups
  • Sugar Free :– 1 Cup (depends on taste)
  • Cardamom Powder :– 1/4 Teaspoon
  • Cashews :– 1 Tablespoon (Chopped)
  • Almonds :- 1 Tablespoon (Chopped)

METHOD
  • Wash the Carrot & Gourd first. 
  • Peel it and start grating.
  • After that heat the ghee in a pan on medium heat.
  • Add grated Carrot and Gourd.
  • Saute till all the moisture from carrot and Gourd is evaporated. It takes 10 - 15 minutes.
  • Now add milk and bring to a simmer.
  • Mix it well and continue cooking till all the milk is evaporated. Do stir in between and scrape the pan.
  • Add Sugar Free & continue cooking and stirring till all the water is gone.
  • Now it is almost ready so add cardamom powder and chopped cashews & almonds. Mix well.
  • Almost the moisture is evaporated and the Carrot-Gourd Halwa is ready serve.

Maa Ki Mithai


This healthy recipe is been carried from my grandmother, who got it from her grandmother and so on, best for winter.

Ingredients :
  • 250 gms Urad dal flour
  • 2 Tbsp Ghee
  • 1/2 cup Milk
  • 250 gms Ghee
  • 250 gms unsweetened mawa
  • 1 tsp Cardamom powder
  • 1/2 tsp Sauth (dry ginger) powder,
  • 1/4 tsp Jaiphal powder,
  • 100 gms cashew, pistachios & almonds roughly chopped,
  • 2 Silver foil leaves
  • For sugar syrup :
  • 1 cup water

Method :

  • In a bowl mix together Udad Daal flour, Milk and Ghee, crumble with hand, its called to give Dhaaba. Cover and Keep it for 15-20 minutes.
  • Now in a Heavy bottom pan heat ghee, add this mixture and roast it till golden brown, and aroma gets released. When done keep it aside, cool it but not completely cool.
  • Now mix sugar free and water in a pan and make syrup till it melt. Add the Mawa , Cardamom powder & dry fruits, saunth powder and Jaiphal powder in it, Now add the roasted urad dal mixture. Simmer for 5 min by stirring continuously.
  • When done spread this in a mold or rectangular plate. Top with Silver foil leaves and garnish with almonds & pistas. Ready to serve.
