- 1/2 cup cabbage,thinly sliced
- 1/2 tsp white pepper
- salt to taste
- black pepper to taste
- 1 egg, whisked
- 1 carrot, grated
- 1 spring onion,sliced
- 1 capsicum/green bell pepper,thinly sliced
- 2 green chillies,chopped
- 2 potatoes
- 4-6 bread slices
- oil for frying
Method:
- Boil,peel and mash potatoes .
- Add salt and black pepper.
- Heat oil in a pan and stir fry the vegetables.
- Add seasoning.
- Mix the stir-fried Vegetables and mashed potatoes.
- Make patties of the mixture.
- Dip in beaten egg and shallow fry till brown.
- Take a slice of bread,place patties,onion rings and cucumber slices.
- Top with the other slice.
- Cut the sandwiches diagonally and serve.
