Vegetable Club Sandwich

Ingredients :
  • 1/2 cup cabbage,thinly sliced
  • 1/2 tsp white pepper
  • salt to taste
  • black pepper to taste
  • 1 egg, whisked 
  • 1 carrot, grated 
  • 1 spring onion,sliced
  • 1 capsicum/green bell pepper,thinly sliced
  • 2 green chillies,chopped
  • 2 potatoes
  • 4-6 bread slices
  • oil for frying
Method:
  • Boil,peel and mash potatoes .
  • Add salt and black pepper.
  • Heat oil in a pan and stir fry the vegetables.
  • Add seasoning.
  • Mix the stir-fried Vegetables and mashed potatoes.
  • Make patties of the mixture.
  • Dip in beaten egg and shallow fry till brown.
  • Take a slice of bread,place patties,onion rings and cucumber slices.
  • Top with the other slice.
  • Cut the sandwiches diagonally and serve.
